Hello Guys, So, I've been experimenting a bit in our kitchen, and I think I've stumbled onto something pretty delicious . It's this vegan pineapple tofu curry recipe that I can't wait to share with you all, Hope you'll like it

- 1 Block (15 oz.) Extra firm tofu, pressed
- 2 Tablespoons + 2 teaspoons Olive oil or peanut oil, divided
- 1 teaspoon Salt
- 2 Large Carrots, chopped
- 6 Ounces Fresh green beans or haricot vert
- 1 1/2 Cups Pineapple, diced
- 2 Tablespoons Soy sauce, divided
- 2 Tablespoons Thai red curry paste, vegan
- 3/4 Cup Coconut cream or full-fat coconut milk
- 3/4 Cup Vegetable broth
- 1 Tablespoon Coconut sugar or agave syrup
- 1 Tablespoon Lime juice
- Fresh cilantro for topping
- Start by slicing the pressed tofu into bite-sized cubes. Heat 2 tablespoons of oil in a large skillet over medium-high heat. Once hot, add the tofu cubes and sprinkle with salt. Cook until golden brown on all sides, then set aside.
- In the same skillet, add the remaining 2 teaspoons of oil. Toss in the chopped carrots and green beans. Stir-fry until they're just tender but still have a bit of crunch, about 5 minutes.
- Now, add the diced pineapple to the skillet along with 1 tablespoon of soy sauce. Cook for another 2 minutes, allowing the pineapple to caramelize slightly.
- Stir in the Thai red curry paste, coating the vegetables and pineapple evenly. Let it cook for a minute to release those aromatic flavors.
- Pour in the coconut cream or coconut milk, followed by the vegetable broth. Stir everything together until well combined.
- Sprinkle in the coconut sugar or agave syrup for a touch of sweetness, then squeeze in the lime juice for a burst of freshness.
- Finally, gently fold in the cooked tofu cubes, making sure they're coated in that luscious curry sauce. Let everything simmer together for a few minutes, allowing the flavors to meld.
- Once everything is heated through and the sauce has thickened slightly, it's time to serve! Plate up your vegan pineapple tofu curry and sprinkle some fresh cilantro on top for that final touch of flavor.
