Ingredients:

For the Shortcakes:

  • 2 cups all-purpose flour
  • 1 tbsp sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/3 cup cold butter, cubed
  • 3/4 cup milk or cream

For the Fruit Compote:
  • 2 cups mixed berries (strawberries, raspberries, blueberries)
  • 1/4 cup sugar
  • 2 tbsp lemon or orange juice
  • 1 tbsp water
  • Whipped cream for serving

Instructions:
  1. Preheat your oven to 425°F. In a bowl, whisk together the flour, 1 tbsp sugar, baking powder and salt.
  2. Use a pastry cutter or two forks to cut in the cold butter until mixture resembles coarse crumbs.
  3. Stir in the milk until a shaggy dough forms. Don't overmix!
  4. Drop dough by spoonfuls onto an ungreased baking sheet.
  5. Bake for 12-15 minutes until golden brown.
  6. As the shortcakes bake, make the compote: In a saucepan, combine the berries, sugar, juice and water. Bring to a simmer and cook for 5-7 minutes until juices release and mixture thickens slightly.
  7. Once shortcakes are out of the oven, slice them in half horizontally. Top bottom halves with fruit compote and a dollop of whipped cream.
  8. Place shortcake tops over whipped cream and get ready to dive into sweet-tart deliciousness!
