Ingredients:
For the Shortcakes:
- 2 cups all-purpose flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup cold butter, cubed
- 3/4 cup milk or cream
For the Fruit Compote:
- 2 cups mixed berries (strawberries, raspberries, blueberries)
- 1/4 cup sugar
- 2 tbsp lemon or orange juice
- 1 tbsp water
- Whipped cream for serving
Instructions:
- Preheat your oven to 425°F. In a bowl, whisk together the flour, 1 tbsp sugar, baking powder and salt.
- Use a pastry cutter or two forks to cut in the cold butter until mixture resembles coarse crumbs.
- Stir in the milk until a shaggy dough forms. Don't overmix!
- Drop dough by spoonfuls onto an ungreased baking sheet.
- Bake for 12-15 minutes until golden brown.
- As the shortcakes bake, make the compote: In a saucepan, combine the berries, sugar, juice and water. Bring to a simmer and cook for 5-7 minutes until juices release and mixture thickens slightly.
- Once shortcakes are out of the oven, slice them in half horizontally. Top bottom halves with fruit compote and a dollop of whipped cream.
- Place shortcake tops over whipped cream and get ready to dive into sweet-tart deliciousness!
