Ingredients:
  • 4 large russet potatoes, peeled
  • 2 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • Optional toppings: sour cream, smoked salmon, chopped fresh herbs, fried eggs
Instructions:
  1. Grate the Potatoes:
    • Using a box grater or a food processor fitted with a grating attachment, grate the peeled potatoes into long, thin strands.
  2. Remove Excess Moisture:
    • Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out any excess moisture. This will help the Rösti become crispy when fried.
  3. Season and Mix:
    • Transfer the squeezed potatoes to a large mixing bowl. Season generously with salt and pepper, to taste. Toss to combine.
  4. Cook the Rösti:
    • In a large non-stick skillet, heat the butter and vegetable oil over medium heat until the butter is melted and bubbly.
    • Add the seasoned grated potatoes to the skillet, spreading them out evenly to form a compact layer. Press down gently with a spatula to flatten the mixture.
    • Cook the Rösti undisturbed for 10-15 minutes, or until the bottom is golden and crispy.
  5. Flip and Cook the Other Side:
    • Carefully invert the Rösti onto a large plate. Add a little more butter and oil to the skillet if needed.
    • Slide the Rösti back into the skillet, uncooked side down. Cook for another 10-15 minutes, or until the second side is golden and crispy.
  6. Serve:
    • Once both sides of the Rösti are golden and crispy, transfer it to a serving plate.
    • Cut the Rösti into wedges and serve hot, accompanied by optional toppings such as sour cream, smoked salmon, chopped fresh herbs, or fried eggs.
  7. Enjoy:
    • Enjoy the delicious and comforting flavors of this Swiss-inspired Rösti, a fusion of crispy grated potatoes that will transport you to the picturesque Swiss Alps with every bite! Guten Appetit!
