Hey everyone! Excited to share one of my favorite Taiwanese recipes with you all: Taiwanese Beef Noodle Soup! It's hearty, flavorful, and oh-so-comforting!!

- 1 lb beef brisket or shank, sliced
- 8 cups beef broth
- 4 garlic cloves, minced
- 1-inch piece of ginger, sliced
- 2 tablespoons soy sauce
- 2 tablespoons rice wine or Shaoxing wine
- 2 tablespoons brown sugar
- 2 star anise
- 2 cinnamon sticks
- 2 scallions, chopped
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Cooked noodles of your choice
- Bok choy or other leafy greens, optional
- Chili oil or chili paste, for serving (optional)

- Heat the vegetable oil in a large pot over medium heat. Add the minced garlic and sliced ginger, and sauté until fragrant, about 1 minute.
- Add the beef slices to the pot and brown them on all sides.
- Pour in the beef broth, soy sauce, rice wine, and brown sugar. Add the star anise and cinnamon sticks. Bring the mixture to a boil, then reduce the heat to low and simmer for 1-2 hours, or until the beef is tender.
- While the soup is simmering, cook the noodles according to the package instructions. If using leafy greens, blanch them in boiling water until tender, then drain.
- Once the beef is tender, remove the star anise and cinnamon sticks from the soup. Season with salt and pepper to taste.
- To serve, divide the cooked noodles and blanched greens (if using) among serving bowls. Ladle the hot beef broth and beef slices over the noodles. Garnish with chopped scallions and serve with chili oil or chili paste on the side, if desired.
