Hey everyone! I'm excited to share one of my favorite Asian-inspired recipes with you all – Teriyaki Chicken Stir-Fry! It's a quick and delicious meal that's perfect for busy weeknights.

- 1 lb boneless, skinless chicken breasts, thinly sliced
- 2 cups mixed vegetables (like bell peppers, broccoli, carrots, snap peas)
- 1/2 cup teriyaki sauce
- 2 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 2 tablespoons vegetable oil
- Cooked rice or noodles, for serving
- Optional toppings: sesame seeds, sliced green onions
- In a small bowl, mix together the teriyaki sauce, soy sauce, minced garlic, and grated ginger. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced chicken to the skillet and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add the mixed vegetables and stir-fry for 3-4 minutes, or until they are tender-crisp.
- Return the cooked chicken to the skillet and pour the teriyaki sauce mixture over the chicken and vegetables. Stir well to coat everything evenly.
- Continue cooking for another 2-3 minutes, or until the sauce has thickened slightly and everything is heated through.
- Serve the Teriyaki Chicken Stir-Fry hot over cooked rice or noodles.
- Garnish with sesame seeds and sliced green onions, if desired.
