Ingredients:
For the Tom Yum Shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 3 tablespoons Tom Yum paste
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 clove garlic, minced
- Salt and pepper, to taste
- 2 cups shredded cabbage or coleslaw mix
- 1 carrot, grated
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 tablespoon honey or sugar
- Salt and pepper, to taste
- Corn or flour tortillas
- Sliced cucumber
- Sliced red onion
- Chopped fresh cilantro
- Lime wedges, for serving
- Sriracha or chili sauce (optional)
- In a bowl, combine the Tom Yum paste, fish sauce, lime juice, brown sugar, minced garlic, salt, and pepper. Add the peeled and deveined shrimp to the bowl and toss to coat. Let the shrimp marinate for 15-30 minutes.
- While the shrimp is marinating, prepare the cabbage slaw. In a separate bowl, combine the shredded cabbage or coleslaw mix, grated carrot, chopped cilantro, lime juice, honey or sugar, salt, and pepper. Toss until well combined. Set aside.
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated shrimp to the skillet and cook for 2-3 minutes per side, or until pink and cooked through. Remove the shrimp from the skillet and set aside.
- Warm the tortillas in a dry skillet or microwave until soft and pliable.
- To assemble the tacos, place a spoonful of the cabbage slaw on each tortilla. Top with cooked shrimp, sliced cucumber, sliced red onion, and chopped fresh cilantro.
- Serve the tacos with lime wedges on the side for squeezing over the top. Drizzle with Sriracha or chili sauce for extra heat, if desired.
- Enjoy your Thai-Inspired Tom Yum Shrimp Tacos, bursting with bold and tangy flavors in every bite!
