For the Cupcakes:
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar

  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup strong brewed coffee, cooled
  • 1 teaspoon vanilla extract
For the Coffee Soak:
  • 1/4 cup strong brewed coffee, cooled
  • 2 tablespoons coffee liqueur (optional)
For the Mascarpone Frosting:
  • 8 oz (225 g) mascarpone cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Cocoa powder for dusting

Instructions​

  1. Prepare the Cupcakes:
    • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
    • In a bowl, whisk together the flour, sugar, baking powder, and salt.
    • In another bowl, beat the softened butter until creamy. Add the eggs one at a time, beating well after each addition.
    • Mix in the milk, coffee, and vanilla extract until combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
    • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
  2. Prepare the Coffee Soak:
    • Mix the cooled coffee with coffee liqueur (if using).
  3. Soak the Cupcakes:
    • Once the cupcakes are cool, brush the tops with the coffee soak, allowing it to soak in.
  4. Make the Mascarpone Frosting:
    • In a bowl, beat the mascarpone cheese until smooth. In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the mascarpone cheese. Add powdered sugar and vanilla extract, mixing until smooth.
  5. Frost the Cupcakes:
    • Pipe or spread the mascarpone frosting onto the cooled cupcakes.
    • Dust with cocoa powder before serving.
