Start your day off right with our delicious and satisfying Tortilla Breakfast Wrap.
Ingredients:
- 1 large flour tortilla
- 2 large eggs
- 2 slices cooked bacon or sausage patties (optional)
- 1/4 cup shredded cheese (cheddar, Monterey Jack, or your favorite)
- 1/4 cup diced bell peppers (any color)
- 1/4 cup diced onions
- Salt and pepper to taste
- Cooking oil or butter, for greasing
Fillings:
- Sliced avocado
- Salsa
- Sour cream
- Chopped fresh herbs (parsley, cilantro)
Instructions:
1. In a small bowl, beat the eggs and season with salt and pepper to taste.
2. Heat a non-stick skillet over medium heat and add a small amount of cooking oil or butter.
3. Pour the beaten eggs into the skillet and cook, stirring occasionally, until scrambled and just set. Remove from heat.
4. Lay the flour tortilla flat on a clean surface.
5. Arrange the cooked bacon or sausage (if using) in the center of the tortilla, followed by the scrambled eggs, shredded cheese, diced bell peppers, and onions.
6. If desired, add any optional fillings such as sliced avocado, salsa, sour cream, or chopped fresh herbs.
7. Fold the bottom edge of the tortilla up over the filling, then fold in the sides, and roll tightly to form a wrap.
8. Optional: Heat a clean skillet or grill pan over medium heat and lightly toast the wrapped tortilla on each side until golden brown and crispy.
9. Remove from heat and let cool slightly before slicing in half.
