Ingredients:​

  • 1 cup bulgur wheat

  • 2 large tomatoes, diced

  • 1 cucumber, diced
  • 1 bunch fresh parsley, finely chopped
  • 1/2 bunch fresh mint leaves, finely chopped
  • 4 green onions, finely chopped
  • Juice of 2-3 lemons
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste

    Instructions:
  1. Prepare the Bulgur:
    • Place the bulgur in a large bowl and pour the boiling water over it. Cover and let it sit for about 20-30 minutes, or until the bulgur is tender and has absorbed all the water. Fluff with a fork and let it cool to room temperature.
  2. Chop the Vegetables and Herbs:
    • While the bulgur is soaking, prepare the vegetables and herbs. Dice the tomatoes and cucumber, and finely chop the parsley, mint, and green onions.
  3. Mix Everything Together:
    • In a large mixing bowl, combine the cooked bulgur with the diced tomatoes, cucumber, chopped parsley, mint, and green onions.
  4. Dress the Salad:
    • Drizzle the lemon juice and olive oil over the salad. Season with salt and pepper to taste.
  5. Toss and Chill:
    • Gently toss everything together until well combined. Taste and adjust seasoning if needed. Cover and refrigerate for at least an hour to allow the flavors to meld together.
