  • In a mixing bowl, combine the flour and salt. Gradually add warm water and oil, mixing until a soft dough forms.
  • Knead the dough for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 30 minutes.

2. Make the Filling:​

  • In a bowl, mix the flaked tuna, capers (if using), chopped onion, hard-boiled eggs, black pepper, cumin, and salt. Add chopped parsley for extra flavor if desired.

3. Roll Out the Dough:​

  • Divide the rested dough into small balls (about the size of a golf ball). On a lightly floured surface, roll each ball into a thin circle (about 8-10 inches in diameter).

4. Assemble the Brik:​

  • Place a circle of dough on a clean surface. Spoon some of the filling onto one half of the dough, leaving a little space around the edges.
  • Fold the other half of the dough over the filling to form a semi-circle. Press the edges to seal, using a fork to crimp and secure the edges.

5. Fry the Brik:​

  • In a deep skillet, heat vegetable oil over medium heat. Once hot, carefully add the brik to the oil, frying until golden brown and crispy on both sides (about 2-3 minutes per side).
  • Remove the brik and drain on paper towels.

6. Serve:​
