I recently made Tunisian Brik, and it was an absolute delight! These crispy, thin pastries filled with a delicious mixture of flavors are a popular street food in Tunisia. Often served as a snack or appetizer, they’re perfect for any occasion. Here’s how to make them:
Ingredients:
For the Dough:
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 cup warm water (adjust as needed)
- 1 tablespoon vegetable oil
For the Filling:
- 1 cup canned tuna, drained and flaked
- 2 tablespoons capers (optional)
- 1 small onion, finely chopped
- 2 hard-boiled eggs, chopped
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon ground cumin
- Salt, to taste
- Fresh parsley, chopped (optional)
For Frying:
- Vegetable oil
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine the flour and salt. Gradually add warm water and oil, mixing until a soft dough forms.
- Knead the dough for about 5 minutes until smooth. Cover it with a damp cloth and let it rest for 30 minutes.
2. Make the Filling:
- In a bowl, mix the flaked tuna, capers (if using), chopped onion, hard-boiled eggs, black pepper, cumin, and salt. Add chopped parsley for extra flavor if desired.
3. Roll Out the Dough:
- Divide the rested dough into small balls (about the size of a golf ball). On a lightly floured surface, roll each ball into a thin circle (about 8-10 inches in diameter).
4. Assemble the Brik:
- Place a circle of dough on a clean surface. Spoon some of the filling onto one half of the dough, leaving a little space around the edges.
- Fold the other half of the dough over the filling to form a semi-circle. Press the edges to seal, using a fork to crimp and secure the edges.
5. Fry the Brik:
- In a deep skillet, heat vegetable oil over medium heat. Once hot, carefully add the brik to the oil, frying until golden brown and crispy on both sides (about 2-3 minutes per side).
- Remove the brik and drain on paper towels.
6. Serve:
- Serve hot with lemon wedges on the side. Enjoy your crispy Tunisian Brik as a delightful snack or appetizer!
