Ingredients:
- 1 cucumber, grated
- 1 1/2 cups Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon extra virgin olive oil1 tablespoon lemon juice
- 1 tablespoon chopped fresh dill (or mint)
- Salt and pepper to taste
- Grate the cucumber using a box grater or food processor. Place the grated cucumber in a fine mesh strainer over a bowl and sprinkle with a pinch of salt. Let it sit for about 10 minutes to allow excess moisture to drain.
- Squeeze out any excess moisture from the grated cucumber using your hands or by wrapping it in a clean kitchen towel and squeezing.
- In a mixing bowl, combine the drained cucumber, Greek yogurt, minced garlic, lemon juice, olive oil, and chopped fresh dill (or mint). Stir until well combined.
- Season with salt and pepper to taste. Adjust the seasoning and lemon juice according to your preference.
- Cover and refrigerate the tzatziki sauce for at least 30 minutes to allow the flavors to meld together.
- Serve chilled and enjoy with pita bread, vegetables, grilled meats, or as a condiment for various dishes.
