I recently made a Ugandan Rolex, and wow—it’s such a fun and satisfying street food! This isn’t the kind of Rolex you wear on your wrist, but trust me, it’s just as valuable.
Ingredients:
For the Chapati:
- 2 cups all-purpose flour
- ½ teaspoon salt
- ¾ cup water (adjust as needed)
- 1 tablespoon vegetable oil
For the Egg Filling:
- 3 eggs
- ½ small onion, finely chopped
- ½ tomato, finely chopped
- ¼ bell pepper, finely chopped
- 1 small chili (optional, for heat)
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon oil or butter (for cooking)
Instructions:
1. Make the Chapati:In a bowl, mix flour and salt, then gradually add water while kneading until you get a soft, elastic dough. Let it rest for 20 minutes. Divide into 4 balls, roll them out into thin circles, and cook on a hot pan with a little oil until golden brown on both sides. Set aside.
2. Prepare the Egg Mixture:
In a bowl, whisk the eggs with onions, tomatoes, bell peppers, chili, salt, and black pepper.
3. Cook the Eggs:
Heat 1 tablespoon of oil in a pan, pour in the egg mixture, and spread it evenly. Cook like an omelet until set, then place a cooked chapati directly on top of the eggs while still in the pan. Press gently to stick them together.
4. Roll it Up & Serve:
Flip the chapati and egg onto a plate, roll it up tightly, and serve warm!
