This plant-based twist on a classic grilled cheese is creamy, flavorful, and loaded with fresh avocado and herby pesto. It's a quick and indulgent snack or light meal that's completely dairy-free!
This vegan avocado pesto grilled cheese is indulgent, satisfying, and packed with vibrant flavors!
Ingredients (Makes 2 Toasties):
For the Avocado Pesto:
- 1 ripe avocado
- 1/4 cup (10 g) fresh basil leaves
- 1 clove garlic
- 2 tbsp nutritional yeast
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
For the Sandwich:
- 4 slices of your favorite bread (sourdough, whole grain, or gluten-free)
- 4 slices vegan cheese (cheddar, mozzarella, or your favorite)
- Vegan butter or margarine, for spreading
Instructions:
1. Make the Avocado Pesto:
- In a food processor or blender, combine the avocado, basil leaves, garlic, nutritional yeast, olive oil, and lemon juice.
- Blend until smooth and creamy. Season with salt and pepper to taste.
2. Assemble the Toastie:
- Spread a generous layer of the avocado pesto on one side of each bread slice.
- Place a slice (or two) of vegan cheese on top of the pesto spread on two slices of bread.
- Top with the remaining bread slices, avocado pesto side down, to form sandwiches.
3. Grill the Sandwiches:
- Spread a thin layer of vegan butter on the outside of each sandwich.
- Heat a non-stick skillet or grill pan over medium heat.
- Place the sandwiches in the pan and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melty.
4. Serve:
- Slice in half and serve warm with a side of tomato soup, salad, or crispy chips.
Tips and Variations:
- Extra Veggies: Add sliced tomatoes or baby spinach for more flavor and texture.
- Spicy Twist: Add a pinch of red pepper flakes to the avocado pesto for a kick.
- Storage: Leftover avocado pesto can be stored in the fridge for up to 2 days in an airtight container.
