Ingredients​

  • 1 3/4 cups all-purpose flour
  • 2 tablespoons sugar (or your preferred sweetener)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups non-dairy milk (such as almond, soy, or oat milk)
  • 1/3 cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg for extra flavor

Instructions​

  1. Preheat the Waffle Iron:
    • Preheat your waffle iron according to the manufacturer's instructions.
  2. Prepare the Batter:
    • In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and optional spices (cinnamon and nutmeg).
    • In a separate bowl or large measuring cup, combine the non-dairy milk, vegetable oil, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; some lumps are okay.
  3. Cook the Waffles:
    • Lightly grease the preheated waffle iron with cooking spray or a little oil.
    • Pour the batter onto the waffle iron (amount will depend on the size of your waffle iron). Spread it out evenly if needed.
    • Close the waffle iron and cook according to the manufacturer's instructions, usually for about 3-5 minutes, until the waffles are golden brown and crispy.
  4. Serve:
    • Carefully remove the waffles from the iron and serve immediately with your favorite toppings, such as fresh fruit, maple syrup, vegan butter, or nut butter.

Tips​

  • If you want to keep the waffles warm while cooking the rest, place them on a baking sheet in a 200°F (90°C) oven.
  • For added texture and flavor, you can fold in ingredients like chopped nuts, chocolate chips, or berries into the batter before cooking.
