  • 1 cup carrots, diced
  • 1 cup zucchini, diced
  • 1 cup corn kernels (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup milk or cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
Instructions:
  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Filling: In a large skillet, heat olive oil over medium heat. Add the onion, bell peppers, carrots, zucchini, and corn. Cook until the vegetables are tender, about 7-10 minutes. Add minced garlic and cook for an additional 1-2 minutes. Season with thyme, basil, salt, and pepper. Let the mixture cool slightly.
  3. Prepare the Pie Crust: Place the pie crust in a pie dish and gently press it into the bottom and sides.
  4. Mix the Filling: In a bowl, whisk together the eggs and milk or cream. Stir in the shredded cheddar cheese. Add the cooked vegetable mixture and mix until well combined.
  5. Fill the Crust: Pour the vegetable mixture into the prepared pie crust, spreading it out evenly.
  6. Bake: Bake in the preheated oven for 35-40 minutes, or until the pie is set and the crust is golden brown.
  7. Cool and Serve: Allow the pie to cool for a few minutes before slicing. Serve warm or at room temperature.
