Hi there! I want to share the recipe I found for a great breakfast involving waffles. My nieces and nephews love waffles, but they aren't excited about plain ones, so I decided to take it to the next level.
Ingredients:
4 waffles (store-bought or homemade)
2 large eggs
4 slices of cheese (cheddar, mozzarella, or your kid’s favorite)
4 slices of cooked bacon or sausage patties (optional, or use vegetarian alternatives)
1 avocado (optional, for a creamy twist)
Fresh fruit (strawberries, bananas, or berries) for topping
Maple syrup or honey (optional, for drizzling)
Instructions:
Prepare the Waffles:
If you are using store-bought waffles, toast them according to the package instructions. If you are making homemade waffles, prepare the batter and cook them on your waffle iron until golden brown and crispy.
Cook the Eggs:
While the waffles are toasting, cook the eggs in a skillet over medium heat. You can scramble them, fry them, or make mini omelets to fit the size of the waffles. Season with a pinch of salt and pepper. You can also add a slice of cheese to melt on top of the eggs.
Assemble the Sandwiches:
Place a waffle on a plate as the base of your sandwich. Add a layer of eggs on top. Place a slice of cheese on top of the eggs, and then add your choice of cooked bacon or sausage for extra flavor.
