- 4 cups cubed fresh watermelon
- 1 cup fresh blueberries
- 1/3 cup crumbled Feta cheese
- 2-3 stems fresh mint, ripped into small pieces
- 1 1/2 tablespoons olive oil (extra virgin preferred)
- 1 1/2 tablespoons balsamic vinegar
- Juice of 1/2 lemon
- In a large mixing bowl, combine the cubed watermelon, fresh blueberries, crumbled Feta cheese, and torn mint leaves.
- In a small bowl, whisk together the olive oil, balsamic vinegar, and lemon juice.
- Pour the dressing over the watermelon mixture and toss well to coat.
