Ingredients:​

  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 8 ounces white American cheese, shredded or cubed
  • 4 ounces Monterrey Jack cheese, shredded or cubed
  • 1/4 cup diced green chilies (canned)
  • 1/4 teaspoon cumin (optional)
  • Salt and pepper to taste
  • Chopped cilantro, diced tomatoes, or jalapeños for garnish (optional)

Instructions:​

  1. Prepare the Cheese: In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to make a roux.
  2. Make the Sauce: Gradually pour in the milk, whisking constantly to combine with the roux. Cook for 2-3 minutes until the mixture begins to thicken.
  3. Add the Cheese: Reduce heat to low. Add the shredded or cubed white American cheese and Monterrey Jack cheese, a handful at a time, stirring until melted and smooth.
  4. Seasoning: Stir in the diced green chilies and cumin (if using). Season with salt and pepper to taste. Continue stirring until the queso is smooth and creamy.
  5. Serve: Transfer the white queso dip to a serving bowl. Garnish with chopped cilantro, diced tomatoes, or jalapeños if desired. Serve warm with tortilla chips or your favorite dipping accompaniment.
