- 1 1/2 pounds beef chuck roast, cut into 1-inch pieces
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne pepper, or to taste
- 1/2 teaspoon paprika
- 2 tablespoons avocado oil or vegetable oil
- 1 cup chopped yellow onion
- 1/2 cup diced celery
- 1/2 cup diced green pepper
- 4 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 1/2 teaspoons Worcestershire sauce
- 1 1/2 teaspoons granulated garlic
- 8 cups water
- 2 tablespoons beef bouillon paste
- 12 ounces dry spaghetti
- 4 large hard-boiled eggs, peeled and halved
- 1 cup sliced green onions
- Prepare the Beef: In a bowl, combine beef pieces with kosher salt, black pepper, cayenne pepper, and paprika. Toss well to coat evenly. Let it sit at room temperature for 20 minutes.
- Sear the Beef: Heat avocado oil in a heavy-bottomed pot over high heat until shimmering. Add the beef in a single layer and sear until a brown crust forms, about 3-5 minutes. Turn the beef over and cook for another 2 minutes. Transfer the beef to a bowl and set aside.
- Cook the Vegetables: Reduce heat to medium-high. Add onions, celery, green pepper, and minced garlic to the pot. Cook, stirring, until onions are translucent, about 3-5 minutes.
- Combine Ingredients: Return the seared beef (along with any juices) to the pot. Add soy sauce, Worcestershire sauce, granulated garlic, water, and beef bouillon paste. Stir well and bring to a simmer over medium-high heat. Reduce heat to medium-low and simmer uncovered until the beef is very tender, for about 60-90 minutes.
- Prepare the Spaghetti: While the soup simmers, bring a large pot of lightly salted water to a boil. Cook the spaghetti according to package instructions until tender, about 12 minutes. Drain and set aside.
- Assemble the Yakamein: To serve, divide the cooked spaghetti evenly among 4 large soup bowls. Ladle the hot beef soup over the spaghetti. Garnish each bowl with halved hard-boiled eggs and sliced green onions.
- Enjoy: Serve hot and adjust seasoning with additional salt or soy sauce if desired. Keep the soup warm until ready to serve.
