  • 1 cup lemongrass, thinly sliced
  • 1/2 cup kaffir lime leaves, thinly sliced
  • 1/2 cup Thai basil leaves
  • 1/2 cup mint leaves
  • 1/2 cup cilantro leaves
  • 1/4 cup shallots, thinly sliced
  • 1/4 cup toasted coconut flakes
  • 1/4 cup roasted peanuts, chopped
  • 2 tablespoons ginger, julienned
  • 2-3 Thai bird's eye chilies, finely chopped (adjust to taste)
  • 1 cup cherry tomatoes, halved

For the Dressing:​

  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce (or soy sauce for a vegetarian version)
  • 1 tablespoon palm sugar (or brown sugar)
  • 1 tablespoon tamarind paste

🥗 Instructions:

  1. Prepare the Dressing:
    • In a small bowl, whisk together the lime juice, fish sauce (or soy sauce), palm sugar, and tamarind paste until the sugar is dissolved and the mixture is well combined.
  2. Assemble the Salad:
    • In a large mixing bowl, combine the shredded chicken (if using), lemongrass, kaffir lime leaves, Thai basil, mint, cilantro, shallots, toasted coconut flakes, roasted peanuts, ginger, and chilies.
    • Add the cherry tomatoes and gently toss everything together.
  3. Dress the Salad:
    • Pour the dressing over the salad and toss again to ensure all the ingredients are well coated with the dressing.
  4. Serve:
    • Transfer the salad to a serving platter or individual plates.
    • Garnish with additional herbs, coconut flakes, and peanuts if desired.
