Ingredients:
- 200g chicken breast, cooked and shredded (optional for a vegetarian version)

- 1/2 cup mint leaves
- 1/2 cup cilantro leaves
- 1/4 cup shallots, thinly sliced
- 1/4 cup toasted coconut flakes
- 1/4 cup roasted peanuts, chopped
- 2 tablespoons ginger, julienned
- 2-3 Thai bird's eye chilies, finely chopped (adjust to taste)
- 1 cup cherry tomatoes, halved
For the Dressing:
- 3 tablespoons lime juice
- 2 tablespoons fish sauce (or soy sauce for a vegetarian version)
- 1 tablespoon palm sugar (or brown sugar)
- 1 tablespoon tamarind paste
Instructions:
- Prepare the Dressing:
- In a small bowl, whisk together the lime juice, fish sauce (or soy sauce), palm sugar, and tamarind paste until the sugar is dissolved and the mixture is well combined.
- Assemble the Salad:
- In a large mixing bowl, combine the shredded chicken (if using), lemongrass, kaffir lime leaves, Thai basil, mint, cilantro, shallots, toasted coconut flakes, roasted peanuts, ginger, and chilies.
