Ingredients:​

  • 140g plain flour
  • 4 large eggs
  • 200ml milk
  • Sunflower oil or beef dripping, for cooking
  • Salt

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 220°C (425°F).
  2. Make the Batter:
    • Sift the flour into a large bowl and make a well in the center.
    • Crack the eggs into the well and whisk together, gradually incorporating the flour.
    • Gradually add the milk while whisking until you have a smooth batter.
    • Season with a pinch of salt.
  3. Rest the Batter:
    • Let the batter rest for at least 30 minutes. This allows the flour to absorb the liquid and gives you a lighter pudding.
  4. Prepare the Tin:
    • Add a small amount of oil or beef dripping (traditional) to each section of a muffin tin or a Yorkshire pudding tin (if you have one). Place the tin in the preheated oven until the fat is smoking hot.
  5. Cooking:
    • Carefully pour the batter into the hot tin, filling each section about halfway.
  6. Bake:
    • Place the tin back in the oven and cook for 20-25 minutes until the puddings are well risen, golden brown, and crisp.
  7. Serve:
    • Serve immediately. Yorkshire puddings are traditionally served with roast beef and gravy, but they can also accompany other roasted meats and vegetables.

Tips:​

  • Ensure the oil or dripping in the tin is very hot before pouring in the batter. This helps achieve a good rise and crisp texture.
  • Don't open the oven door too early in the baking process to avoid the puddings deflating.
