Ingredients:
- 4 cups shredded zucchini (about 4 medium zucchinis)
- 1 teaspoon salt
- 2 large eggs
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese, divided
- 1 cup shredded cheddar cheese, divided
- 1 cup pizza sauce
- 1/2 cup sliced pepperoni
- 1/2 cup sliced black olives (optional)
- 1/2 cup sliced bell peppers (optional)
- 1/2 cup sliced mushrooms (optional)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9x13-inch baking dish with cooking spray or a little olive oil.
- Prep the Zucchini: Place the shredded zucchini in a colander and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or paper towels to squeeze out as much moisture as possible.
- Make the Crust: In a large bowl, combine the drained zucchini, eggs, grated Parmesan cheese, 1 cup of shredded mozzarella, and 1/2 cup of shredded cheddar. Mix well to combine. Press the mixture into the prepared baking dish, spreading it out evenly to form the crust.
- Bake the Crust: Bake the zucchini crust in the preheated oven for about 20 minutes, or until it’s set and just starting to turn golden brown.
- Add the Toppings: Remove the crust from the oven and spread the pizza sauce evenly over the top. Sprinkle with the remaining 1 cup of mozzarella cheese and 1/2 cup of cheddar cheese.
