Ingredients:

  • For the Bhaji:
    • 2 tablespoons butter​
    • 1 tablespoon oil​
    • 1 cup finely chopped onion​
    • 1 cup finely chopped bell pepper​
    • 1 cup chopped tomatoes​
    • 1 cup boiled and mashed potatoes​
    • 1 cup boiled and chopped mixed vegetables (carrots, peas, beans)​
    • 2 teaspoons ginger-garlic paste​
    • 1 teaspoon red chili powder​
    • 1 teaspoon turmeric powder​
    • 1 tablespoon Pav Bhaji masala​
    • 1 teaspoon cumin seeds​
    • 1 teaspoon salt (or to taste)​
    • 1 tablespoon lemon juice​
    • 2 tablespoons chopped fresh coriander leaves​
  • For Serving:
    • 8 pav buns (Indian bread rolls)​
    • 2 tablespoons butter (for toasting pav)​
    • Lemon wedges​
    • Extra chopped coriander leaves​
    • Sliced onions (optional)​
Instructions:​
  1. Heat butter and oil in a large pan over medium heat. Add cumin seeds and let them sizzle.​
  2. Add finely chopped onions and cook until translucent.​
  3. Stir in ginger-garlic paste and cook for a minute until fragrant.​
  4. Add bell pepper and cook for 2-3 minutes until softened.​
  5. Add chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until tomatoes are mushy and the oil begins to separate.​
  6. Mix in boiled potatoes and chopped mixed vegetables. Cook for 5-7 minutes, mashing the mixture with the back of the spoon.​
  7. Stir in Pav Bhaji masala and cook for another 5 minutes, adjusting salt and spices as needed.​
  8. Add lemon juice and chopped coriander leaves. Mix well and cook for a minute.​
For the Pav:​
  1. Heat a pan over medium heat. Add butter and place pav buns cut-side down to toast until golden brown.​
To Serve:​
  1. Serve the bhaji hot with toasted pav buns. Garnish with extra coriander leaves, lemon wedges, and sliced onions if desired.​
