- 1 pork loin (about 3-4 pounds)
- 2 tablespoons olive oil
- 2 tablespoons brown sugar
- 1 tablespoon paprika
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Applewood or hickory wood chips for smoking
Instructions:
- Prepare the Pork Loin:
- Pat the pork loin dry with paper towels.
- Rub the olive oil all over the pork loin.
- Make the Spice Rub:
- In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, black pepper, salt, thyme, and rosemary.
- Rub the spice mixture evenly over the entire pork loin.
- Prepare the Smoker:
- Preheat your smoker to 225°F (110°C).
- Add applewood or hickory wood chips to the smoker box.
- Smoke the Pork Loin:
- Place the pork loin on the smoker rack.
- Smoke for about 2.5 to 3 hours, or until the internal temperature reaches 145°F (63°C).
- Rest and Serve:
- Remove the pork loin from the smoker and let it rest for 10-15 minutes.
- Slice and serve.
