- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (such as peas, carrots, cabbage and corn)
- 1 cup cooked protein (such as shrimp, chicken, or tofu), optional
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for extra flavor)
- 1 teaspoon sesame oil
- 2 green onions, sliced
- Salt and pepper to taste
- Prepare the Ingredients:
- Ensure the cooked rice is cooled and preferably refrigerated for at least a few hours or overnight.
- Chop the vegetables and protein (if using) into bite-sized pieces.
- Cook the Eggs:
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.
- Add the beaten eggs and scramble until fully cooked. Remove from the wok and set aside.
- Sauté Aromatics:
- In the same wok, add the remaining 1 tablespoon of vegetable oil.
- Add the chopped onion and garlic, and sauté for 2-3 minutes until fragrant and translucent.
- Add Vegetables and Protein:
- Add the mixed vegetables and cook for another 3-4 minutes until they are tender.
- If using, add the cooked protein and stir-fry for an additional 2 minutes.
- Combine with Rice:
- Add the cooled rice to the wok, breaking up any clumps with a spatula.
- Stir-fry for 5-6 minutes, ensuring the rice is heated through and slightly crispy.
- Season the Rice:
- Pour the soy sauce, oyster sauce (if using), and sesame oil over the rice.
- Stir well to evenly coat the rice and other ingredients.
- Finish the Dish:
- Add the scrambled eggs back into the wok.
- Toss everything together, and cook for another 1-2 minutes.
- Season with salt and pepper to taste.
- Garnish with sliced green onions before serving.
