Ingredients:
- 2 slices of whole grain bread
- 1 ripe avocado
- 2 large eggs
- Salt and pepper to taste
- Optional toppings: cherry tomatoes, feta cheese, red pepper flakes, or fresh herbs
- Toast the slices of whole grain bread until golden brown and crispy.
- While the bread is toasting, slice the avocado in half and remove the pit. Scoop out the avocado flesh into a small bowl and mash it with a fork until smooth.
- Bring a pot of water to a gentle simmer. Crack one egg into a small bowl or ramekin.
- Using a spoon, create a gentle whirlpool in the simmering water. Carefully slide the egg into the center of the whirlpool. Let it cook for about 3-4 minutes for a soft poached egg.
- While the egg is poaching, spread the mashed avocado evenly onto the toasted bread slices.
- Once the egg is cooked to your desired level of doneness, use a slotted spoon to remove it from the water and place it on top of one of the avocado toast slices.
- Repeat the poaching process with the second egg.
- Season the eggs with salt and pepper to taste. Feel free to add any optional toppings like sliced cherry tomatoes, crumbled feta cheese, red pepper flakes, or fresh herbs.
- Serve immediately and enjoy your delicious and nutritious avocado toast with poached eggs!
