  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 2 large eggs
  • Salt and pepper to taste

Instructions:
  1. Toast the slices of whole grain bread until golden brown and crispy.
  2. While the bread is toasting, slice the avocado in half and remove the pit. Scoop out the avocado flesh into a small bowl and mash it with a fork until smooth.
  3. Bring a pot of water to a gentle simmer. Crack one egg into a small bowl or ramekin.
  4. Using a spoon, create a gentle whirlpool in the simmering water. Carefully slide the egg into the center of the whirlpool. Let it cook for about 3-4 minutes for a soft poached egg.
  5. While the egg is poaching, spread the mashed avocado evenly onto the toasted bread slices.
  6. Once the egg is cooked to your desired level of doneness, use a slotted spoon to remove it from the water and place it on top of one of the avocado toast slices.
  7. Repeat the poaching process with the second egg.
