Once on a trip, I tried yummy Baked Chocolate Avocado Cake Donuts.
When I got home, I tried making them myself in my kitchen.
Now, I've got a bunch cooling down, and making them was super fun! Give it a try, it's tasty!
▢1 cup white whole wheat flour
▢1/2 cup cashew flour
▢1/4 cup unsweetened cocoa powder
▢1/2 teaspoon salt
▢1 1/2 teaspoon baking powder
▢1/4 cup chopped dark chocolate
▢1 ripe avocado
▢2 teaspoons vanilla extract
▢1 1/4 cup coconut or almond milk
▢1/3 cup maple syrup
▢1/4 cup brown sugar
▢1/2 teaspoon apple cider vinegar
For the Avocado Frosting
▢1 ripe avocado
▢2 tablespoons coconut butter
▢1 teaspoon vanilla extract
▢1/4 cup coconut/almond milk
▢1 tablespoon maple syrup
▢1/2 cup powdered sugar
▢cacao nibs
Instructions
Preheat oven to 350 degrees, grease a donut pan with baking spray.
Combine the flours, cocoa powder, salt, baking powder and chopped chocolate in a large bowl.
Whisk together the remaining ingredients in a medium bowl making sure there are no lumps from the avocado.
Add the wet ingredients to the dry and stir to fully combine with a spatula.
Spoon the batter into the donut pan.
Bake for 20-22 minutes.
Remove from the oven, let cool a couple of minutes before removing from the pan and transferring to a cooling rack.
While the donuts cool combine the frosting ingredients in a food processor and process until smooth.
Spread the frosting on top of the donut and top with cacao nibs.
Or, just toss the donuts in powdered sugar for a different topping option
