- For the Baked Pears:
- 2 ripe pears
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon honey
- For the Spiced Pecan Granola:
- 1 cup rolled oats
- 1/2 cup chopped pecans
- 1/4 cup sliced almonds
- 2 tablespoons brown sugar
- 1 tablespoon melted butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- For the Honey Yogurt:
- 1 cup plain yogurt
- 1 tablespoon honey
Make the Baked Pears:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Cut the pears in half lengthwise and core them. Brush the pear halves with lemon juice to prevent browning.
- In a small bowl, combine the cinnamon, nutmeg, and honey. Drizzle the spice mixture over the pear halves.
- Place the pear halves in the prepared baking dish. Bake for 25-30 minutes, or until the pears are tender and slightly golden brown.
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, pecans, almonds, brown sugar, melted butter, cinnamon, and ginger. Mix well to coat the oats and nuts.
- Spread the granola mixture on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown, stirring occasionally.
- In a small bowl, stir together the plain yogurt and honey.
- Spoon a dollop of honey yogurt into the center of each pear half. Top with the spiced pecan granola and enjoy!
