Banana Bread Muffins Recipe

Hey everyone! I’ve been making these banana bread muffins for a while now, and they always hit the spot—super moist and not too sweet. Thought I’d share with you all. They’re perfect for breakfast or a snack when you’ve got ripe bananas hanging around!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 3 large ripe bananas (mashed)
  • 1/3 cup melted butter (unsalted)
  • 3/4 cup sugar (I usually go a little less)
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • Optional: chocolate chips or nuts if you’re feeling fancy!
Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners or grease it up.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mix the mashed bananas, melted butter, sugar, egg, and vanilla.
  4. Slowly add the wet ingredients to the dry, stirring until just combined (don’t over-mix!).
  5. If you’re adding chocolate chips or nuts, fold them in now.
  6. Spoon the batter into the muffin tin, filling about 3/4 full.
  7. Bake for 18-22 minutes, or until a toothpick comes out clean.
