- 2 ripe bananas, mashed
- 1/3 cup melted butter or vegetable oil
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: chocolate chips, chopped nuts, or dried fruit for extra flavor
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups with cooking spray.
- In a large mixing bowl, combine the mashed bananas, melted butter or oil, sugar, egg, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- If desired, fold in any optional add-ins like chocolate chips, nuts, or dried fruit.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
