Ingredients:


  • 4 cups cooked rice (or 1 cup uncooked rice)
  • 1 cup frozen peas, thawed
  • 2 tablespoons finely diced carrots
  • 2 eggs, beaten
  • 1/2 cup diced onion
  • 1 1/2 tablespoons butter
  • 2 tablespoons soy sauce
  • Salt and pepper, to taste
Directions:

  1. Prepare the Rice:If using uncooked rice, cook it according to package instructions (typically, bring 2 cups of water to a boil, add rice and a pinch of salt, cover, reduce heat, and simmer for 20 minutes). Once cooked, transfer the rice to a large bowl and let it cool in the refrigerator until near room temperature.
  2. Prepare the Ingredients:
    • In a small pan over medium heat, scramble the eggs until fully cooked. Break the scrambled eggs into small, pea-size bits as you cook them.
    • Once the rice has cooled, add thawed peas, finely diced carrots, scrambled egg bits, and diced onion to the bowl with the rice. Gently toss all the ingredients together.
  3. Cooking the Fried Rice:
    • In a large frying pan or skillet, melt the butter over medium-high heat.
    • When the butter has melted completely, add the bowl of rice mixture to the pan.
    • Drizzle soy sauce over the rice and season with salt and pepper to taste.
    • Cook the fried rice for 6-8 minutes, stirring frequently, until heated through and slightly crispy.
