- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1 cup 2% milk
- 1/2 cup mayonnaise
- 3/4 cup crumbled cooked bacon (about 12 strips)
- 1/2 cup chopped seeded plum tomatoes
- 2 tablespoons minced fresh parsley
- Shredded lettuce (optional)
- Preheat your oven to 400°F (200°C). Grease or line 12 muffin cups with paper liners.
- In a large bowl, mix the flour, baking powder, and sugar.
- In a separate small bowl, whisk together the milk and mayonnaise until smooth.
- Gradually add the milk mixture to the dry ingredients, stirring until just combined.
- Fold in the crumbled bacon, chopped tomatoes, and minced parsley.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
- Optionally, sprinkle the cooled muffins with shredded lettuce before serving.
