This simple yet delicious roasted Brussels sprouts recipe will change the way you think about this humble vegetable, making it a favorite side dish for any meal. Brussels sprouts, often underrated and misunderstood, have made a culinary comeback in recent years. When roasted to perfection, these miniature cabbages transform into a crispy, caramelized delight with a nutty flavor that’s hard to resist

Ingredients:​

  • 1 1/2 pounds Brussels sprouts
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Optional: 2 tablespoons balsamic vinegar or lemon juice, grated Parmesan cheese, and chopped fresh herbs (such as thyme or rosemary) for garnish

Instructions:​

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Brussels Sprouts:
    • Trim the ends of the Brussels sprouts and remove any yellow or damaged outer leaves. Cut the larger sprouts in half lengthwise to ensure even cooking.
  3. Season the Brussels Sprouts:
    • Place the Brussels sprouts in a large bowl. Drizzle with olive oil and sprinkle with kosher salt and freshly ground black pepper. Toss well to ensure all sprouts are evenly coated with oil and seasoning.
  4. Roast the Brussels Sprouts:
    • Spread the Brussels sprouts out in a single layer on a baking sheet, making sure they are not overcrowded. Roast in the preheated oven for 20-25 minutes, or until they are golden brown and crispy on the edges. Shake the pan halfway through the cooking time to ensure even roasting.
  5. Add Optional Garnishes:
    • For an extra burst of flavor, drizzle the roasted Brussels sprouts with balsamic vinegar or lemon juice immediately after they come out of the oven. Sprinkle with grated Parmesan cheese and fresh herbs if desired.
  6. Serve:
    • Transfer the roasted Brussels sprouts to a serving dish and enjoy them while they're hot.
