Ingredients:
- 1 head of butter leaf lettuce, washed and dried
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- Tear the butter leaf lettuce into bite-sized pieces and place them in a large salad bowl.
- Add the halved cherry tomatoes, sliced cucumber, thinly sliced red onion, and crumbled feta cheese to the bowl with the lettuce.
- In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar to make the dressing. Season with salt and pepper to taste.
- Drizzle the dressing over the salad ingredients in the bowl.
- Toss the salad gently until all the ingredients are evenly coated with the dressing.
- Taste and adjust seasoning if necessary.
- Serve the butter leaf lettuce salad immediately as a refreshing side dish or as a light meal on its own.
