  • 1 box of vanilla cake mix (plus ingredients listed on the box, typically eggs, oil, and water)
  • 1 cup ricotta cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Additional mini chocolate chips for garnish
Instructions:
  1. Preheat your oven according to the instructions on the cake mix box.
  2. Prepare the vanilla cake batter according to the instructions on the box.
  3. Pour the cake batter into two 9-inch round cake pans lined with parchment paper.
  4. Bake the cakes according to the instructions on the box, until a toothpick inserted into the center comes out clean.
  5. Allow the cakes to cool completely in the pans.
  6. In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
  7. Fold in the mini chocolate chips.
  8. In another mixing bowl, whip the heavy cream until stiff peaks form.
  9. Fold the whipped cream into the ricotta mixture until well combined.
  10. Place one cooled cake layer on a serving plate.
  11. Spread a layer of the ricotta mixture evenly over the cake layer.
  12. Place the second cake layer on top and gently press down.
  13. Spread the remaining ricotta mixture over the top of the cake.
  14. Garnish with additional mini chocolate chips.
  15. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.
