- 1 box of vanilla cake mix (plus ingredients listed on the box, typically eggs, oil, and water)
- 1 cup ricotta cheese
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mini chocolate chips
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- Additional mini chocolate chips for garnish
- Preheat your oven according to the instructions on the cake mix box.
- Prepare the vanilla cake batter according to the instructions on the box.
- Pour the cake batter into two 9-inch round cake pans lined with parchment paper.
- Bake the cakes according to the instructions on the box, until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool completely in the pans.
- In a mixing bowl, combine the ricotta cheese, powdered sugar, and vanilla extract. Mix until smooth.
- Fold in the mini chocolate chips.
- In another mixing bowl, whip the heavy cream until stiff peaks form.
- Fold the whipped cream into the ricotta mixture until well combined.
- Place one cooled cake layer on a serving plate.
- Spread a layer of the ricotta mixture evenly over the cake layer.
- Place the second cake layer on top and gently press down.
- Spread the remaining ricotta mixture over the top of the cake.
- Garnish with additional mini chocolate chips.
- Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.
