This granola is perfect for breakfast, a snack, or even a topping for yogurt or smoothie bowls. It’s packed with wholesome ingredients and warm spices, making it a nutritious and tasty treat. :):)

Ingredients:
  • 2 cups old-fashioned oats
  • 1 cup grated carrots
  • 1 cup chopped pecans
  • ½ cup shredded coconut
  • ¼ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup raisins
Instructions:
  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, combine the oats, grated carrots, pecans, shredded coconut, cinnamon, ginger, nutmeg, and salt.
  3. Add Wet Ingredients: Pour in the maple syrup and melted coconut oil. Stir until all the ingredients are well coated.
  4. Bake: Spread the mixture evenly on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until the granola is golden brown and crispy.
  5. Add Raisins: Remove from the oven and let it cool completely. Once cooled, stir in the raisins.
  6. Store: Store the granola in an airtight container at room temperature for up to a week.
