Ingredients​

  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1/2 cup breadcrumbs (plus extra for coating)
  • 1/4 cup all-purpose flour
  • 2 tablespoons chopped green onions (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (optional)
  • Salt and pepper, to taste
  • 1 large egg
  • Oil for frying

Instructions​

  1. Prepare the Mixture:
    • In a mixing bowl, combine the corn, shredded cheese, breadcrumbs, flour, green onions, garlic powder, paprika, salt, and pepper. Mix well.
  2. Add Egg:
    • Beat the egg in a separate bowl, then add it to the corn mixture. Mix until everything is well combined.
  3. Form the Balls:
    • Take small portions of the mixture and roll them into balls (about 1 inch in diameter). If the mixture is too wet, add a bit more breadcrumbs or flour.
  4. Coat the Balls:
    • Roll each ball in additional breadcrumbs to coat evenly.
  5. Heat the Oil:
    • In a deep pan or skillet, heat oil over medium heat. You’ll need enough oil to submerge the balls partially.
  6. Fry the Balls:
    • Once the oil is hot, carefully add the cheese corn balls in batches, frying until golden brown and crispy (about 3-4 minutes per batch). Use a slotted spoon to turn them for even cooking.
    • Remove the balls and drain them on paper towels.
  7. Serve:
    • Serve hot with your favorite dipping sauce, like marinara, ranch, or spicy mayo.
