A healthy and yummy snack!
Ingredients
- 1 cup corn (fresh, frozen, or canned)
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup breadcrumbs (plus extra for coating)
- 1/4 cup all-purpose flour
- 2 tablespoons chopped green onions (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (optional)
- Salt and pepper, to taste
- 1 large egg
- Oil for frying
Instructions
- Prepare the Mixture:
- In a mixing bowl, combine the corn, shredded cheese, breadcrumbs, flour, green onions, garlic powder, paprika, salt, and pepper. Mix well.
- Add Egg:
- Beat the egg in a separate bowl, then add it to the corn mixture. Mix until everything is well combined.
- Form the Balls:
- Take small portions of the mixture and roll them into balls (about 1 inch in diameter). If the mixture is too wet, add a bit more breadcrumbs or flour.
- Coat the Balls:
- Roll each ball in additional breadcrumbs to coat evenly.
- Heat the Oil:
- In a deep pan or skillet, heat oil over medium heat. You’ll need enough oil to submerge the balls partially.
- Fry the Balls:
- Once the oil is hot, carefully add the cheese corn balls in batches, frying until golden brown and crispy (about 3-4 minutes per batch). Use a slotted spoon to turn them for even cooking.
- Remove the balls and drain them on paper towels.
- Serve:
- Serve hot with your favorite dipping sauce, like marinara, ranch, or spicy mayo.
