- 2 cups all-purpose flour
- 4 large eggs
- 1/2 cup milk
- Salt and pepper to taste
- 1/2 cup shredded Swiss cheese
- 1/2 cup shredded Gruyere cheese
- 1/4 cup grated Parmesan cheese
- 4 tablespoons unsalted butter
- 1/4 cup chopped fresh parsley (optional)

- In a large mixing bowl, whisk together the flour, eggs, milk, salt, and pepper until a smooth batter forms. Let the batter rest for about 10 minutes.
- Bring a large pot of salted water to a boil. Once boiling, reduce the heat to medium-high.
- Using a spaetzle maker or a colander with large holes, press the batter through the holes directly into the boiling water, working in batches if necessary.
- Cook the spaetzle for 2-3 minutes, or until they float to the surface of the water. Then, using a slotted spoon, transfer the cooked spaetzle to a colander to drain.
- In a large skillet, melt the unsalted butter over medium heat. Add the drained spaetzle to the skillet and toss to coat evenly in the butter.
- Sprinkle the shredded Swiss cheese, Gruyere cheese, and grated Parmesan cheese over the spaetzle in the skillet. Continue to cook, stirring occasionally, until the cheese is melted and bubbly and the spaetzle are golden brown.
- Remove the skillet from heat and garnish the Cheesy Spaetzle Delight with chopped fresh parsley, if desired.
