Hey everyone! I recently made these Chewy Brownie Cookie Whoopie Pies and they're awesome. Imagine soft, brownie-like cookies with a creamy marshmallow filling. They're great for any time you need a treat, and you can get creative by adding sprinkles or even swapping the filling for ice cream.

Ingredients:

Cooking spray
1 (18.4 ounces) package of brownie mix
¼ cup all-purpose flour
1 cup chocolate chips
¼ cup vegetable oil
2 large eggs
1 tablespoon multicolored candy sprinkles, or to taste
1 ½ cups powdered sugar
½ cup unsalted butter, softened
½ teaspoon vanilla extract
½ (16 ounce) tub marshmallow creme
Instructions:

Step 1: Preheat the oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper. Lightly coat a wire rack with cooking spray.

Step 2: In a medium bowl, stir together the brownie mix and flour until well combined. Add chocolate chips, oil, and eggs; stir until well blended.

Step 3: Scoop 20 rounded tablespoons of dough onto the prepared baking sheets. Decorate half of the cookies with candy sprinkles.

Step 4: Bake in the preheated oven for 9 to 10 minutes. Remove from the oven and let stand for 2 to 3 minutes before transferring to the greased rack to cool completely for about 30 minutes.

Step 5: Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, combine powdered sugar, butter, and vanilla. Blend until light and fluffy, about 4 minutes. Fold in marshmallow creme.

Step 6: Transfer the marshmallow mixture to a large zip-top bag and cut a small hole in one corner. Pipe the filling onto the center of one plain cookie and top with a sprinkled cookie. Repeat with the remaining filling and cookies.
