Ingredients:
- 1 pound boneless, skinless chicken breasts, thinly sliced or diced
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bell pepper (any color), diced
- 1 jalapeño, seeded and minced (optional for spice)
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
- 4 large flour tortillas
- Optional toppings: salsa, guacamole, sour cream, chopped tomatoes, shredded lettuce
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- In the same skillet, add diced onion, bell pepper, and jalapeño (if using). Sauté until vegetables are tender, about 5 minutes. Add minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
- Return cooked chicken to the skillet. Add chopped cilantro and lime juice. Stir to combine flavors. Taste and adjust seasoning if needed.
- Warm the flour tortillas slightly in a dry skillet or microwave to make them pliable. Spoon a portion of the chicken mixture onto each tortilla, leaving room at the edges. Top with black beans, cooked rice, and shredded cheese.
- Fold the sides of each tortilla over the filling, then roll from the bottom up to enclose the filling completely.
- Serve the chicken burritos immediately, or for a crispy exterior, heat a clean skillet over medium heat. Place each burrito seam-side down and cook until golden brown on all sides, about 2-3 minutes per side.
- Serve with salsa, guacamole, sour cream, chopped tomatoes, shredded lettuce, or any other toppings of your choice.
