  • 1 bell pepper (any color), diced
  • 1 jalapeño, seeded and minced (optional for spice)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 4 large flour tortillas
  • Optional toppings: salsa, guacamole, sour cream, chopped tomatoes, shredded lettuce
Directions:
  1. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. In the same skillet, add diced onion, bell pepper, and jalapeño (if using). Sauté until vegetables are tender, about 5 minutes. Add minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
  3. Return cooked chicken to the skillet. Add chopped cilantro and lime juice. Stir to combine flavors. Taste and adjust seasoning if needed.
  4. Warm the flour tortillas slightly in a dry skillet or microwave to make them pliable. Spoon a portion of the chicken mixture onto each tortilla, leaving room at the edges. Top with black beans, cooked rice, and shredded cheese.
  5. Fold the sides of each tortilla over the filling, then roll from the bottom up to enclose the filling completely.
  6. Serve the chicken burritos immediately, or for a crispy exterior, heat a clean skillet over medium heat. Place each burrito seam-side down and cook until golden brown on all sides, about 2-3 minutes per side.
  7. Serve with salsa, guacamole, sour cream, chopped tomatoes, shredded lettuce, or any other toppings of your choice.
