Chicken noodle soup is a comforting and nourishing dish, perfect for any time of the year. I love it every time I'm from a long tiring trip.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 cloves garlic, minced
  • 8 cups chicken broth (homemade or store-bought)
  • 2 cups cooked chicken, shredded or chopped
  • 2 cups egg noodles
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)
Instructions:

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
  2. Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  3. Pour in the chicken broth and bring the soup to a simmer.
  4. Once simmering, add the cooked chicken, egg noodles, dried thyme, and bay leaf to the pot. Season with salt and pepper to taste.
  5. Cook the soup for about 10-12 minutes or until the noodles are tender and the flavors have melded together.
  6. Once the noodles are cooked, remove the bay leaf from the soup. Taste and adjust seasoning if necessary.
