- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth (homemade or store-bought)
- 2 cups cooked chicken, shredded or chopped
- 2 cups egg noodles
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish (optional)
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, until the vegetables are softened, about 5-7 minutes.
- Add the minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
- Pour in the chicken broth and bring the soup to a simmer.
- Once simmering, add the cooked chicken, egg noodles, dried thyme, and bay leaf to the pot. Season with salt and pepper to taste.
- Cook the soup for about 10-12 minutes or until the noodles are tender and the flavors have melded together.
- Once the noodles are cooked, remove the bay leaf from the soup. Taste and adjust seasoning if necessary.
