Ingredients:
- 1/2 cup (1 stick) unsalted butter, plus extra for greasing
- 4 ounces semi-sweet chocolate, chopped
- 2 large eggs
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 tablespoons all-purpose flour
- Pinch of salt
- Cocoa powder or powdered sugar, for dusting
- Optional toppings: vanilla ice cream, whipped cream, fresh berries
- Preheat your oven to 425°F (220°C). Grease four ramekins or custard cups with butter and dust lightly with cocoa powder or powdered sugar. Place them on a baking sheet for easier handling.
- In a medium microwave-safe bowl, melt the butter and chopped semi-sweet chocolate together in the microwave in 30-second intervals, stirring after each interval until smooth. Alternatively, you can melt them together using a double boiler on the stovetop. Set aside to cool slightly.
- In a large mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined and slightly thickened.
- Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and glossy.
- Sift the all-purpose flour and salt into the chocolate mixture, and gently fold them in until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
- Place the baking sheet with the filled ramekins in the preheated oven and bake for 12-14 minutes, or until the edges of the cakes are set but the centers are still slightly jiggly.
- Remove the Chocolate Lava Cakes from the oven and let them cool in the ramekins for 1-2 minutes.
- Carefully run a knife around the edges of each cake to loosen them from the ramekins. Then, invert each cake onto a serving plate.
- Dust the tops of the Chocolate Lava Cakes with cocoa powder or powdered sugar, and garnish with optional toppings such as vanilla ice cream, whipped cream, or fresh berries.
