Ingredients:

  • 1/2 cup (1 stick) unsalted butter, plus extra for greasing
  • 4 ounces semi-sweet chocolate, chopped
  • 2 large eggs
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • Cocoa powder or powdered sugar, for dusting
  • Optional toppings: vanilla ice cream, whipped cream, fresh berries
Instructions:

  1. Preheat your oven to 425°F (220°C). Grease four ramekins or custard cups with butter and dust lightly with cocoa powder or powdered sugar. Place them on a baking sheet for easier handling.
  2. In a medium microwave-safe bowl, melt the butter and chopped semi-sweet chocolate together in the microwave in 30-second intervals, stirring after each interval until smooth. Alternatively, you can melt them together using a double boiler on the stovetop. Set aside to cool slightly.
  3. In a large mixing bowl, whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until well combined and slightly thickened.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and glossy.
  5. Sift the all-purpose flour and salt into the chocolate mixture, and gently fold them in until just combined. Be careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.
  7. Place the baking sheet with the filled ramekins in the preheated oven and bake for 12-14 minutes, or until the edges of the cakes are set but the centers are still slightly jiggly.
  8. Remove the Chocolate Lava Cakes from the oven and let them cool in the ramekins for 1-2 minutes.
  9. Carefully run a knife around the edges of each cake to loosen them from the ramekins. Then, invert each cake onto a serving plate.
  10. Dust the tops of the Chocolate Lava Cakes with cocoa powder or powdered sugar, and garnish with optional toppings such as vanilla ice cream, whipped cream, or fresh berries.
  11. Serve the Chocolate Lava Cakes immediately, and enjoy the luxurious experience of warm, molten chocolate goodness!
Feel free to customize your Chocolate Lava Cakes by adding a teaspoon of espresso powder for a richer chocolate flavor, or a tablespoon of liqueur such as Grand Marnier or Baileys for an extra kick. You can also experiment with different types of chocolate for varied intensities of flavor. Get creative and make them your own!

Ah, chocolate lava cake, a true dessert classic! 🍫🌋 Though recipes may vary in terms of ingredients and ratios, I think the key is achieving that irresistible molten center. It's essential to follow the baking instructions closely and not overdo it in the oven. When done right, breaking into that lava-filled goodness is pure bliss! 😍🎂
