Ingredients:
  • 1 pound ground pork
  • 2-3 cloves garlic, minced
  • 2 tablespoons smoked paprika
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons red wine vinegar or apple cider vinegar
Instructions:
  1. In a large mixing bowl, combine all the ingredients: ground pork, minced garlic, smoked paprika, chili powder, ground cumin, dried oregano, cayenne pepper, salt, pepper, and vinegar.
  2. Mix the ingredients thoroughly until well combined. You can use your hands or a spoon to ensure even distribution of spices.
  3. Once mixed, cover the bowl with plastic wrap and let the chorizo mixture marinate in the refrigerator for at least 2 hours, preferably overnight, to allow the flavors to meld.
  4. After marinating, use the chorizo immediately in your favorite recipes, or store it in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
