Hey everyone! Feeling like a no-bake creamy dessert? Check out our version of Tiramisu - the most 'in' dessert of the times! The coffee, homemade mascarpone cream and a spark of rum come together to create a heavenly 3 layered pudding that one cannot resist. The tiramisรน is loaded with flavor but at the same time it is an easy soft and fluffy texture, in the way soaked ladyfinger gradually melting in the mouth. The wonderful aspect of this treat is that you can make it the day before and let the flavors combine to an even more delicious experience. Non would be proud of this sweet treat! For the most heavenly tiramisu, go for the best ingredients, which should include strong coffee and quality ladyfingers.

- 4 large egg yolks
- 1/2 cup (100 g) plus 2 tablespoons sugar
- 16 oz mascarpone cheese, room temperature
- 2 cups heavy whipping cream
- 1 teaspoon pure vanilla extract
- Pinch of kosher salt
- 2 1/2 cups strongly brewed coffee, room temperature
- 1 tablespoon dark rum
- 40 ladyfingers
- 1 tablespoon unsweetened cocoa powder
Instructions:
- In a medium saucepan, bring water to a simmer over medium heat. In a large heatproof bowl, whisk together egg yolks and 1/2 cup sugar. Place the bowl over the simmering water (double boiler method) and cook, whisking frequently, until the mixture doubles in volume and becomes smooth, about 3 to 5 minutes. Remove from heat and whisk in the mascarpone cheese until smooth.
- In a large bowl, using a hand mixer or a stand mixer fitted with the whisk attachment, beat the heavy cream, vanilla extract, salt, and remaining 2 tablespoons sugar on medium speed until stiff peaks form, about 3 to 4 minutes. Gently fold the whipped cream into the mascarpone mixture until well combined.
- In a large glass measuring cup or tall glass, stir together the brewed coffee and dark rum. Dip each ladyfinger into the coffee mixture one at a time.
- In a 13" x 9" baking dish, arrange a layer of 20 dipped ladyfingers in an even row. Pour about half of the mascarpone custard mixture over the ladyfingers and smooth the top. Repeat with another layer of dipped ladyfingers and the remaining custard mixture.
- Cover the baking dish and refrigerate for at least 4 hours or overnight to set.
- Before serving, dust the top of the tiramisu with unsweetened cocoa powder.
