Ingredients:
- 1 jar grape leaves in brine, drained and rinsed
- 1 cup long-grain rice, rinsed
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup pine nuts, toasted
- 1/4 cup raisins or currants (optional)
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
- Greek yogurt or tzatziki sauce for serving
- In a large bowl, combine the rinsed rice, chopped onion, minced garlic, chopped dill, chopped parsley, toasted pine nuts, and raisins or currants (if using). Mix well to combine.
- Place a grape leaf on a clean work surface, shiny side down, and spoon a small amount of the rice mixture onto the center of the leaf.
- Fold the bottom of the grape leaf over the filling, then fold in the sides, and roll it up tightly into a cigar shape.
- Repeat the process with the remaining grape leaves and rice mixture until all the filling is used up.
- Place the stuffed grape leaves seam side down in a large pot in a single layer, packing them snugly together.
- Drizzle the olive oil and lemon juice over the stuffed grape leaves, then season with salt and pepper to taste.
- Pour enough water over the grape leaves to cover them by about an inch.
- Place a heavy plate or lid on top of the grape leaves to weigh them down and keep them submerged in the liquid.
- Cover the pot with a lid and bring the water to a boil over medium-high heat. Once boiling, reduce the heat to low and let the stuffed grape leaves simmer gently for 45-50 minutes, or until the rice is cooked and the grape leaves are tender.
- Once cooked, carefully remove the stuffed grape leaves from the pot using a slotted spoon and transfer them to a serving platter.
- Serve the Cozy Stuffed Grape Leaves warm or at room temperature, accompanied by Greek yogurt or tzatziki sauce for dipping.
