Hey everyone! I wanted to share this super easy recipe for baked zucchini chips that I’ve been obsessed with lately. They make a great healthy snack, and you won’t believe how crispy they turn out! Here’s what you need:

Ingredients:​

  • 2 medium zucchinis
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (or your favorite seasoning!)
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for topping

Instructions:​

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. Slice the zucchinis thinly (about 1/8 inch thick) using a mandoline or a sharp knife. The thinner, the better for that crispy texture!
  3. In a large bowl, toss the zucchini slices with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
  4. Arrange the slices in a single layer on the baking sheet, making sure they don’t overlap.
  5. Bake for about 2 hours, flipping them halfway through, until they are golden and crispy. Keep an eye on them in the last 15 minutes to avoid burning!
  6. Optional: Sprinkle with grated Parmesan cheese right before they’re done for an extra cheesy flavor!
