- 2 lbs goat meat, cut into cubes
- 2 tablespoons curry powder
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 potatoes, peeled and diced
- 2 carrots, peeled and diced
- 2 cups coconut milk
- 2 cups water
- 2 teaspoons thyme leaves
- 2 teaspoons ginger, grated
- Salt and pepper to taste
- Scotch bonnet pepper (optional, for extra heat)
- Fresh cilantro or parsley for garnish
Instructions:
- In a large bowl, season the goat meat with curry powder, salt, and pepper. Make sure the meat is evenly coated with the curry powder.
- Heat the vegetable oil in a large pot over medium heat. Add the chopped onions and minced garlic, and sauté until the onions are soft and translucent.
- Add the seasoned goat meat to the pot and cook until browned on all sides.
- Stir in the diced potatoes and carrots, and cook for a few minutes.
- Pour in the coconut milk and water, and add the thyme leaves, grated ginger, and Scotch bonnet pepper (if using). Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the goat meat is tender.
