  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small pieces

For the Custard Filling:
  • 2 cups whole milk
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Ground nutmeg or cinnamon for garnish (optional)
Instructions:
  1. Prepare the Pie Crust:
    • In a bowl, mix flour and sugar. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together.
    • Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat Oven: Preheat your oven to 375°F (190°C).
  3. Roll Out and Fit Crust:
    • On a floured surface, roll out the chilled dough to fit a 9-inch pie pan.
    • Transfer the dough to the pie pan, trim and crimp the edges. Chill the crust in the fridge for 10 minutes.
  4. Pre-Bake Crust (Optional but recommended):
    • Line the pie crust with parchment paper and fill with pie weights or dried beans.
    • Bake for 10 minutes, then remove the parchment and weights and bake for an additional 5 minutes until the crust is lightly golden. Let cool slightly.
  5. Prepare the Custard Filling:
    • In a saucepan, heat the milk over medium heat until just starting to simmer. Remove from heat.
    • In a bowl, whisk together sugar, eggs, flour, vanilla, and salt.
    • Gradually whisk in the warm milk until smooth.
  6. Fill and Bake:
    • Pour the custard filling into the pre-baked crust.
    • Bake in the preheated oven for 45-50 minutes, or until the custard is set and the top is lightly golden.
  7. Cool and Serve:
    • Let the pie cool completely before slicing. Garnish with a sprinkle of nutmeg or cinnamon if desired.
