Decadent Chocolate Lava Cake

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 4 ounces of high-quality semi-sweet chocolate, chopped
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 6 tablespoons all-purpose flour
  • Pinch of salt
  • Optional: Vanilla ice cream or whipped cream, for serving
Instructions:

  1. Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder or flour, shaking out any excess.
  2. In a microwave-safe bowl, combine the butter and chopped chocolate. Microwave in 30-second intervals, stirring in between, until the mixture is melted and smooth. Alternatively, you can melt the butter and chocolate together in a heatproof bowl set over a pot of simmering water (double boiler method). Remove from heat and let it cool slightly.
  3. In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.
  4. Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and well incorporated.
  5. Sift in the flour and salt, and gently fold them into the chocolate mixture until just combined. Be careful not to overmix.
  6. Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
  7. Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the centers still look soft and slightly jiggly.
  8. Remove the lava cakes from the oven and let them cool in the ramekins for about 1-2 minutes.
  9. Carefully run a knife around the edges of each cake to loosen them from the ramekins, then invert them onto serving plates.
  10. Serve the chocolate lava cakes warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
