- 1/2 cup (1 stick) unsalted butter
- 4 ounces of high-quality semi-sweet chocolate, chopped
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 6 tablespoons all-purpose flour
- Pinch of salt
- Optional: Vanilla ice cream or whipped cream, for serving
- Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust them with cocoa powder or flour, shaking out any excess.
- In a microwave-safe bowl, combine the butter and chopped chocolate. Microwave in 30-second intervals, stirring in between, until the mixture is melted and smooth. Alternatively, you can melt the butter and chocolate together in a heatproof bowl set over a pot of simmering water (double boiler method). Remove from heat and let it cool slightly.
- In a separate bowl, whisk together the powdered sugar, eggs, egg yolks, and vanilla extract until well combined.
- Gradually pour the melted chocolate mixture into the egg mixture, whisking constantly until smooth and well incorporated.
- Sift in the flour and salt, and gently fold them into the chocolate mixture until just combined. Be careful not to overmix.
- Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
- Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the centers still look soft and slightly jiggly.
- Remove the lava cakes from the oven and let them cool in the ramekins for about 1-2 minutes.
- Carefully run a knife around the edges of each cake to loosen them from the ramekins, then invert them onto serving plates.
- Serve the chocolate lava cakes warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
